Apple Pie Recipe

A recipe I take when the taste of a pie takes me, the picture on the right is what it looks like at home.

Crust

2 cups (500 mL) all-purpose flour
¾ tsp (4 mL) salt
1 cup (250 mL) vegetable shortening
1 egg
2 tbsp (30 mL) cold water
1 tbsp (15 mL) white vinegar


Topping

4 apples (2 lbs) cut into thick slices
½ cup (125 mL) pure maple syrup
½ cup (125 mL) golden brown sugar
½ tsp (2 mL) cinnamon (optional) 
1 egg, beaten
3 tbsp (45 mL) sugar


How to make the crust

In a large bowl, combine flour and salt.

Add shortening and cut in with pastry blender or 2 knives until crumbly.

In a small bowl, beat egg, water and vinegar together.

Pour the liquid mixture into the flour mixture.

Stir with a fork only to moisten dry ingredients.

On plastic wrap, flatten dough into an 8-inch (20 cm) disk.

Wrap dough and refrigerate for 15 minutes.

Preheat oven to 425ºF (220ºC).

Line a baking sheet with parchment paper.


Topping Instructions

In a large bowl, combine apples, maple syrup and cinnamon.

On a lightly floured surface, roll out cooled dough into a 16-inch (40 cm) circle.

Place dough on prepared baking sheet.

In the center of the dough, stack the apples into a 9-inch (23 cm) circle.

Fold dough over apples, leaving an opening in the middle.

Brush with beaten egg and sprinkle with sugar.

Bake in preheated oven for 20 minutes.

Reduce heat to 375ºF (190ºC) and continue baking for 40 to 50 minutes, or until crust is golden and apples are tender.

Top with maple syrup and serve warm or at room temperature, as desired.
